This exciting two-day course tracks the ancient Spice Trade of Arabia, the Far East and India and how the trade and spices were discovered in and came to Africa and the historical and cultural influencers behind some of Africa’s most popular dishes.

About the course
In this course, explore the history of trades such as the ‘cinnamon route’ and ‘clove route’ and their influence on the dishes of the East coast of Africa, and the discovery of various spices across the continent. Learn dishes from the ‘spice islands’ of Madagascar and Zanzibar. Explore how to best use spices to enhance dishes, Discover popular spices along with lesser known spices in our spice tasting sessions, explore the
